A Mid Week Mash-Up

The snow/ice is slowly but surely melting away. And the only thing I will have to remember it by is these guys...


And I didn't even have to go outside and make them. Thank goodness. These snowmen are some of my favorite Christmas decorations... except for they are more of a winter decoration which means they survive the "Crazy Christmas decor pack up" each year. ( I told Kev that they get to stay out until Easter. I just hope they don't get melted by the sun shining in through the window)
And speaking of packing up Christmas. It happened. Like a week ago. I planned to tell you all about it as it seems my holidays are always a blur on this blog. But alas, it wasn't meant to be. I have too many other things to talk about. Just know that I was SO organized this year. I had a Rubbermaid tub ( or two or three) for EACH room. That way when I go to decorate next year, I can do one room at a time and won't have every thing scattered all over the place. Hopefully.
Also, instead of just giving you all a whirlwind wrap up of how we spent Christmas... I have decided to tell different short stories based on gifts that were given. I thought it would be more fun that way. Plus we got some amazing and useful things this year and I need for you to know that.
And because all I ever talk about is FOOD ( according to my sis), I can't let you down and not post about some yummies that we are having this week.
Like my new favorite snack:

Sesame Rice crackers ( from the Asian food section). They are so light and tasty and have like an eyelash worth of calories. PLUS Sonoma Jack pepper jack cheese. I got it on sale at World Market. 50 calories and DELICIOUS. PLUS fresh cherries!! Which I got on sale at Publix. I really wanted grapes - but the cherries were cheaper, more fun to eat ( because I get to spit the seed and try to hit the plate - harder than it seems), and SO good.
Not bad for a snack if I do say so myself.
And then there are the dinners this week. Which have consisted of ONE thing. Chicken Spaghetti.

As I mentioned earlier in the week.... This week has been a crazy busy one with lots going on at work. So, add in some snow and I'm having to close multiple days in a row. That's where this dish comes in so handy. It is from The Pioneer Woman. Chicken, spaghetti, peppers, onions, pimentos, chicken broth, cream of mushroom soup and cheese. If you use a Rotisserie chicken then it is one of the easiest things to put together. (That is if you haven't just woken up and start cutting the onion with the skin still on.)
The only problem. It makes a TON. Like it over fills a 13x9 dish. And then it is just Kev that is eating it. Which as delicious as it is, he will probably break down in tears after the fifth day. So, I will take some to work. And try to get rid of some of it there.
And now, just to prove to you that Kev is very much a part of participating in this blog ( even if he never writes)...... TA DA.....

I asked him to get some pictures of his dinner so I could post it on here. And out of the multiple pictures that he took - this was my favorite.
He is so dedicated.
It also looks like he has on a trench coat of some sort - based on the black shiny collar. I wonder what else he was up to last night......
Two more days until the BURNATHON!! I can't wait!

  1. You're not eating ANY of the chicken spaghetti?? Why ever not?
    Although I will definitely appreciate a tasting if I'm lucky enough to work on a day it's there :)
